“Pappy” Van Winkle could be considered the grandfather of liquor in the United States. He lived by a simple philosophy – to make fine bourbon. Continuing this tradition, are the folks over at Pappy and Co who make products with the same dedication to taste, quality and style that their great grandfather’s original vision embodied. This is best exemplified in their Barrel-Aged pure maple syrup.
Now, living in Canada, we KNOW maple syrup, so when we were sent this item for review, out of the box, it had high expectations to live up to. By collaborating with Bissel maple syrup farm and aging it in Pappy Van Winkle’s bourbon barrels, it might be argued that a perfect storm of quality and flavor was born.
The sap is aged 6 months in bourbon barrels that are 10 to 12 years old. The result…a unique tasting syrup that has hints of vanilla, butter, oak and, of course, bourbon. As per usual, we put it through the only test in our minds worth trying – the pancake test. Admittedly, we were pleasantly surprised at the taste, it was rich and very flavorful, albeit it, not your conventional syrup palate but one we could get used to.
The hints of bourbon transform the syrup to something that is delicious and does work well with pancakes, however, we could also see the application for this flavor in any recipe that calls on honey, treacle, or the like. We especially look forward to trying this in some sugar maple cookies or as a glaze on some pork.
Nonetheless, Pappy and Company have a fine maple syrup on their hands that has an original and flavorful taste and one that us sweet-toothed Canadians totally approve and endorse.
